The Fresh-Ground Difference
The most common surprise that people have with Paravisini Coffee Company is that we do not sell pre-ground coffee. Yes, this hurts some of our business, as some customers are not willing to invest money and time into grinding their own coffee before brewing, but it would be a compromise on our quality if we did otherwise.
The reason we encourage our customers (and all coffee drinkers) to grind their own coffee is because of the fragile nature of coffee’s aromatics. The coffee bean is filled with various oils, sugars, and other chemicals that produce the total aroma and flavor that we pride ourselves in bringing out of the beans. The whole bean provides a protective layer that keeps most of those compounds intact for roughly 2-4 weeks with proper storage.
When the “seal” of the whole been is broken through grinding, the flavors begin to leave the grounds, and enter the surrounding air (This is what makes that wonderful smell every time you grind your coffee). After grinding, you have about 2 hours (if the grounds are put into a sealed container) to brew your coffee before you will experience a significant flavor loss.
Many people that have dabbled in the world of brewing their own coffee at home, will find themselves unable to enjoy the flavorless substitute that they made at home. There are many factors to take into consideration with home coffee brewing, but the one that will make or break your coffee’s flavor more than any other is grinding fresh before every brew.
